Measuring & Pouring
Accuracy is what makes a cocktail taste the same every single time. The most important tool for this is the jigger — a small double-sided measuring cup. The standard sizes are 1.5 oz on the large side and 0.75 oz on the small side.
Incorrect measurements are the number one cause of bad cocktails. Too much alcohol makes a drink harsh; too little makes it weak and watery.
✓How to measure and pour
- Hold the jigger between your fingers, close to the glass
- Fill it to the top for an accurate pour
- Pour in one smooth, controlled motion
- As you improve, practice "free pouring" by counting (a 4-count usually equals about 1.5 oz)
When you are starting out, always use a jigger. Free pouring takes practice — and accuracy matters more than speed at first.
